The folks behind Rigmarole have opened a pizza place called Oobatz in collaboration with Dan Pearson, the pizzaiolo behind their successful Pizzamarole pop-up. It’s incredible, you should go. Definitely the best pizza we’ve had in Paris… or perhaps anywhere else.

Dan Pearson set out to make “the perfect pizza” by first mastering sourdough bread. After baking bread in both Maine and Madrid, his first Paris stint was at the now-defunct Circus bakery in 2018. After the pandemic, he joined the team at Ten Belles Bread, which he says “makes the best bread in Paris.”

Before I tell you more about how great Oobatz is, let me emphasize something: you’re going to have to work for this. Reservations open two weeks in advance and this is going to be a hard one to get. However strange you feel about booking pizza so far in advance, it’s totally worth it.

The menu is compact, with five pizzas plus a “carte blanche” option to be chosen by the chef. Three of the five are vegetarian, and carte blanche can swing meaty or veggie. There’s a delicious side salad (get it!) and three desserts. There aren’t any starters, and I wouldn’t want to sacrifice belly space for them, anyway.

We loved the zucchini pizza with mozzarella di bufala. In fact, the vegetarian pizzas were our favorites of the night, despite the fact that we all eat meat. Pearson’s crust is such a star that I personally preferred the lighter toppings. Overall, and overwhelmingly, our favorite was that first one topped with asparagus and citrus. The lemony note made it so, so good.
